Statistically, cheese is the most craved food substance. People crave it more than chocolate, more than fat, more than sugar. Here are some tips to help you enjoy your cheese at its fullest potential.
 
The best place for cheese in the home refrigerator is at the bottom, either in the door’s lowest shelf or in the covered vegetable compartment. Cheese should not, however, be kept in the vegetable compartment with vegetables, especially vegetables with a strong odor like broccoli or onions, as flavors migrate in the fridge.

Cheese is a living thing, and plastic smothers it.  Plastic can also transmit “off” flavors to a cheese if it remains wrapped for too long.  In the retail setting, we have to use plastic wrap, because nothing else so efficiently inhibits unwanted mold growth and prevents the cheese from drying out. If you are going to eat a piece of cheese pretty soon, it’s fine to leave it in the plastic in their fridge. But if you plan to keep it longer than a few days, a piece of waxed paper or foil is better for the cheese. Tupperware is good for hard grating cheeses like Parmesan.

The flavors of a cheese reach their fullest expression at room temperature.  Take your cheeses out of the fridge 30-45 minutes before they plan to eat it.

Cheese trays, whether for a party or as a part of a meal, are best when they offer a limited number of cheeses of some variety. Robert recommends that people use no more than three or four cheeses at a time, and also that at least one of them is a goatsmilk or a sheepsmilk cheese. Different colors and textures can offer nice variety. For a party, count on 1/4 pound of cheese per person.
